  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (270g) semi-sweet chocolate chips
  • Vanilla ice cream, for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Place your cast iron skillet in the oven while it heats up.
  2. In a large bowl, beat together softened unsalted butter, granulated sugar, and packed brown sugar until light and fluffy, about 3 minutes.
  3. Beat in the large egg and pure vanilla extract until combined.
  4. In a separate bowl, whisk together all-purpose flour, baking soda, and salt.
  5. Gradually add the dry mix to the wet ingredients, mixing just until incorporated. Avoid overmixing.
  6. Stir in semi-sweet chocolate chips evenly throughout the dough.
  7. Carefully remove the hot skillet from the oven and lightly grease with butter or non-stick spray.
  8. Spread the cookie dough evenly in the skillet, smoothing the top with a spatula or your fingers.
  9. Place the skillet back in the oven and bake for 20–25 minutes until edges are golden brown and set but the center is still soft and slightly underbaked.
  10. Let the cookie cool for about 5 minutes, then spoon generous scoops of vanilla ice cream on top. Drizzle with warm chocolate sauce or hot fudge if desired.
