Wholesome Energy Bites with Dates and Nuts

These no-bake energy bites combine the natural sweetness of Medjool dates with crunchy toasted nuts for a quick, wholesome snack perfect for busy days.

  • 1 cup (150g) Medjool dates, pitted
  • 1 cup (140g) mixed nuts (almonds, walnuts, cashews), toasted
  • 1/2 cup (45g) rolled oats
  • 2 tablespoons chia seeds
  • 1/4 cup (60g) natural peanut butter or almond butter
  • 2 tablespoons honey or maple syrup (optional)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Toast the nuts in a skillet over medium heat for 3-5 minutes until fragrant and lightly browned. Remove and let cool.
  2. Pulse the cooled nuts in a food processor 8-10 times until finely chopped but still chunky.
  3. Add the pitted dates to the processor and pulse until the mixture starts to clump together. Soak dates in warm water for 10 minutes beforehand if dry, then drain.
  4. Add rolled oats, chia seeds, nut butter, honey or maple syrup (if using), vanilla extract, and sea salt to the processor. Pulse until combined into a sticky dough.
  5. Scoop about 1 tablespoon (15g) of mixture and roll into balls with dampened hands if sticky.
  6. Place the energy bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to 1 week or freeze for longer storage.

Notes

Pulse nuts instead of blending to keep crunchy texture. Use soft Medjool dates or soak dry dates before use. Toast nuts for enhanced flavor. Adjust sweetness after tasting. Chill bites to firm up. Store refrigerated or freeze for longer shelf life.
