This easy 3-ingredient crockpot salsa chicken is ready in just 20 minutes using frozen chicken, salsa, and optional black beans. Perfect for busy weeknights, it’s tender, flavorful, and endlessly versatile.

  • 1.5 pounds boneless, skinless chicken breasts (frozen or thawed)
  • 16 ounces salsa (jarred or fresh)
  • 15 ounces canned black beans, drained and rinsed (optional)

Instructions

  1. Place the chicken breasts in a single layer at the bottom of the crockpot.
  2. Pour the entire jar of salsa over the chicken, spreading it evenly.
  3. Cover and cook on high for 20 minutes. Do not lift the lid during cooking.
  4. After 20 minutes, shred the chicken directly in the crockpot using two forks.
  5. If using black beans, stir them into the shredded chicken and let heat through for 2-3 minutes with the lid on.
  6. Serve hot over rice, in tacos, on nachos, or as desired.

Notes

If using thawed chicken, check at 15 minutes. Internal temperature should reach 165°F. For extra flavor, add a squeeze of lime juice or fresh cilantro at the end. Chunky salsa can be blended for more even coating.
