  • All-purpose flour, 1¾ cups (220g)
  • Baking soda, 1 teaspoon
  • Baking powder, ½ teaspoon
  • Salt, ½ teaspoon
  • Pumpkin pie spice, 2 teaspoons
  • Cinnamon, 1 teaspoon
  • Powdered sugar, 1 cup (120g)
  • Pure maple syrup, 2 tablespoons

Instructions

  1. Brown the butter: Place the butter in a light-colored saucepan over medium heat. Stir occasionally. After about 4-5 minutes, when golden brown specks form and it smells nutty, remove from heat immediately. Pour into a heat-safe bowl and let cool for 10 minutes.
  2. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly spray exposed sides with nonstick spray.
  3. Mix wet ingredients: In a large bowl, whisk together cooled brown butter, granulated sugar, and brown sugar until combined. Add pumpkin puree, room temperature eggs, and vanilla extract. Whisk until smooth and glossy.
  4. Combine dry ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon until no lumps remain.
