Ingredients

Scale
  • 2 large boneless, skinless chicken breasts (about 1 pound total)
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot Original)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup ranch dressing
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/2 cup crumbled blue cheese
  • 1 cup celery sticks (3-inch pieces)
  • 1 cup carrot sticks or baby carrots
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pickled jalapeños (optional)
  • 1 bag tortilla chips (scoop-style)
  • 1 bag pretzel sticks
  • 1 bag crostini or sliced baguette, toasted
  • Fresh parsley or chives for garnish

Instructions

  1. Cook the chicken: Place chicken breasts in a large skillet, cover with water or chicken broth, bring to a boil, then simmer for 15-20 minutes until internal temperature reaches 165°F. Let cool slightly.
  2. Shred the chicken: Place cooked chicken in a large bowl and shred with two forks or a hand mixer on low speed until fluffy.
  3. Make the buffalo sauce mixture: In a small bowl, whisk together buffalo wing sauce, melted butter, garlic powder, onion powder, and smoked paprika. Pour over shredded chicken and toss to coat. Let sit for 5 minutes.
  4. Prepare the creamy base: In a medium bowl, beat softened cream cheese until smooth. Add sour cream and ranch dressing, mix until combined. Fold in half of the shredded cheddar and half of the crumbled blue cheese.
  5. Assemble the board: On a large board or baking sheet, spread the cream cheese mixture evenly in the center, leaving about 2 inches of space around the edges. Layer should be about 1/2 inch thick.
  6. Add the buffalo chicken: Spoon the buffalo chicken mixture over the cream cheese layer, leaving a small border of the creamy base visible.
  7. Top with cheese: Sprinkle remaining shredded cheddar and crumbled blue cheese over the chicken. Optionally, broil for 2-3 minutes for a melty finish.
  8. Arrange the dippers: Around the edges, arrange celery sticks, carrot sticks, cherry tomatoes, pickled jalapeños (if using), tortilla chips, pretzel sticks, and crostini. Place small bowls of extra ranch and buffalo sauce on the board.
  9. Garnish and serve: Sprinkle fresh parsley or chives over the top. Serve immediately, or refrigerate for up to 2 hours. Let sit at room temperature for 15 minutes before serving if refrigerated.

Notes

Do not overcook the chicken; cook just until 165°F. Let cream cheese soften completely for smooth spreading. Balance heat by adjusting buffalo sauce amount. The cream cheese base prevents chips from getting soggy. Prep chicken and cream cheese base up to 2 days ahead. For outdoor tailgates, place board on ice to keep cool.
