  • ¾ cup (150g) packed light brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg yolk
  • ½ cup (120g) pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 cup (170g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, whisk together the flour, cornstarch, baking soda, salt, and pumpkin pie spice.
  3. In a medium bowl, whisk together the melted butter (cooled), brown sugar, and granulated sugar until smooth and glossy, about 30 seconds.
  4. Add the egg yolk, pumpkin puree, and vanilla extract to the butter mixture. Whisk until fully combined and uniform in color.
  5. Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold together gently until no streaks of flour remain. Do not overmix.
  6. Fold in the chocolate chips, reserving about 2 tablespoons to press onto the tops of the baked cookies.
