  • 1 package (10 oz) marshmallows
  • 6 cups crispy rice cereal
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Gel food coloring (team colors)
  • Assorted sprinkles (optional)

Instructions

  1. Line a baking sheet with parchment paper. Lightly grease the inside of a football-shaped cookie cutter with cooking spray or butter.
  2. In a large microwave-safe bowl, melt 6 tablespoons butter in the microwave in 30-second intervals until melted. Do not let it brown.
  3. Add marshmallows to the melted butter and stir to coat. Microwave for 60 seconds, then stir. Continue in 30-second intervals until completely melted and smooth.
  4. Stir in 1/4 teaspoon vanilla extract and a pinch of salt until fully incorporated.
  5. Pour in 6 cups crispy rice cereal and fold gently with a rubber spatula until all cereal is coated.
  6. Place the cookie cutter on the prepared baking sheet. Spoon some mixture into the cutter, filling halfway. Press firmly with greased fingers. Fill to the top and press again to about 1/2 inch thick.
  7. Lift the cookie cutter straight up. If it sticks, run a butter knife around the inside edge. Repeat with remaining mixture, placing cookies about 1 inch apart.
  8. Let cookies cool completely at room temperature, about 20-30 minutes.
  9. While cookies cool, make frosting: In a medium bowl, beat 1/2 cup softened butter with an electric mixer until creamy. Add powdered sugar one cup at a time, alternating with milk. Beat until smooth and fluffy. Stir in 1/2 teaspoon vanilla extract.
  10. Divide frosting into separate bowls for each team color. Add gel food coloring a tiny drop at a time, stirring well after each addition.
  11. Transfer each colored frosting to a piping bag or zip-top bag. Snip a tiny corner off each bag.
  12. Pipe frosting onto cooled cookies in desired pattern (e.g., laces in white, team colors around edges).
  13. Add sprinkles while frosting is still wet, if using.
  14. Let frosting set at room temperature until firm, about 30 minutes to 1 hour, or refrigerate for 15 minutes.

Notes

Keep hands greased with cooking spray when pressing mixture into cookie cutter. Work quickly as mixture sets when cool. If mixture gets too stiff, microwave for 10-15 seconds to soften. For clean shapes, grease cookie cutter well and run a knife around edges before lifting. Cookies can be made ahead and stored unfrosted for up to 5 days at room temperature, or frozen for up to 3 months.
