  • Green leaf lettuce or spinach leaves (enough to cover board)
  • 45 slices white cheese (provolone or white cheddar), cut into strips
  • 4 sturdy pretzel sticks or breadsticks (for goal posts)
  • 8 ounces salami or pepperoni slices
  • 4 ounces prosciutto or ham (for roses)
  • 8 ounces cheddar cheese, cut into cubes
  • 12 ounces mozzarella balls (bocconcini)
  • 4 ounces Pepper Jack cheese, cut into strips or cubes
  • 1/2 cup ranch dressing or blue cheese dip
  • 1/2 cup French onion dip or hummus
  • 1 cup grape tomatoes or cherry tomatoes
  • 1 cup baby carrots
  • 1 cup celery sticks
  • 8 ounces assorted crackers (Ritz, Wheat Thins, bagel chips)
  • 4 ounces pretzels (mini or sticks)
  • 4 ounces roasted almonds or cashews
  • 1 cup red or green grapes

Instructions

  1. Wash and thoroughly dry the lettuce or spinach leaves. Arrange them in a single, even layer over the entire board to create the ‘grass’.
  2. Cut white cheese slices into thin strips (about 1/2 inch wide). Lay them horizontally across the field at even intervals (2-3 inches apart) to create yard lines.
  3. For goal posts: Place two pretzel sticks vertically at each end of the field, sticking them into the lettuce. Lay a third pretzel stick horizontally across the top to form the crossbar. Use a dab of cream cheese or hummus to secure.
  4. Lay salami or pepperoni slices in straight lines across the field, perpendicular to the cheese strips, to create additional yard lines. Space evenly between cheese strips.
  5. Scatter cheddar cheese cubes evenly around the field in small clusters. Place mozzarella balls in a line down the center of the field (about 2 inches apart). Add Pepper Jack cheese near the goal posts.
  6. Place small bowls of dip at opposite ends of the board (end zones). Arrange grape tomatoes, baby carrots, and celery sticks around the dip bowls.
  7. Arrange assorted crackers along the long sides of the board (sidelines). Place pretzels and nuts in small piles along the edges. Scatter grapes in small clusters near the crackers.
  8. Roll prosciutto or ham slices into roses: fold each slice in half lengthwise, then roll tightly from one end and fluff the top. Place in a few key spots.
  9. Fill any empty spots with extra crackers, nuts, or cheese cubes. Add decorative football-themed picks or tiny flags if desired. Serve immediately or refrigerate for up to 2 hours (add crackers just before serving).

Dry lettuce thoroughly to prevent sogginess. Use a rimmed baking sheet for easier carrying. Cut cheese strips evenly for a neat look. Add crackers just before serving to keep them crisp. For team colors, swap ingredients accordingly.
