  • 1/2 cup unsalted butter, melted
  • 1/2 cup packed light brown sugar
  • 1/4 cup heavy cream
  • 2 large eggs, lightly beaten

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • Pinch of cayenne pepper (optional)
  • 1 cup pecan halves or pieces
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup unsalted butter, cold and cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Cook the sweet potatoes: Peel and cut into 1-inch cubes. Place in a large pot, cover with cold water by about an inch, and add a generous pinch of salt. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes until fork-tender. Drain well and let steam dry for a few minutes.
  2. Mash the sweet potatoes: Transfer to a large mixing bowl. Mash with a potato masher until mostly smooth, then use a hand mixer on low speed for about 30 seconds until silky and lump-free. Let cool for about 10 minutes.
  3. Mix the sweet potato base: Add melted butter, brown sugar, heavy cream, beaten eggs, vanilla extract, cinnamon, nutmeg, salt, and cayenne (if using). Stir until well combined and smooth.
  4. Make the streusel topping: In a medium bowl, combine chopped pecans, flour, brown sugar, cinnamon, and salt. Add cold butter cubes. Use a pastry cutter or two forks to cut the butter into the dry ingredients until the mixture resembles coarse meal with some pea-sized butter pieces.
  5. Assemble the casserole: Pour the sweet potato mixture into a greased 9×13-inch baking dish and spread evenly. Sprinkle the pecan streusel generously over the top. Cover with plastic wrap and refrigerate for up to two days, or bake immediately.
  6. Bake: Preheat oven to 350°F (175°C). Bake uncovered for 35-40 minutes until the streusel is golden brown and the filling is bubbly around the edges. If the topping browns too quickly, tent loosely with foil. Let rest for 10 minutes before serving.

Notes

For best results, toast pecans before using. Let the casserole rest for 10 minutes after baking to allow the filling to set. This casserole can be assembled up to two days ahead and refrigerated. It also freezes well for up to 3 months.
