  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (1 stick) unsalted butter, cold, cut into small cubes
  • 1 teaspoon flaky sea salt (plus more for serving)
  • Optional: store-bought or homemade caramel sauce for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the center of the oven.
  2. Peel, core, and slice the apples into ¼-inch thick slices. You should end up with about 6-7 cups of sliced apples.
  3. In a large mixing bowl, combine the sliced apples with ½ cup brown sugar, ¼ cup granulated sugar, 2 tablespoons flour, 1 tablespoon lemon juice, 1 teaspoon vanilla, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, and ¼ teaspoon salt. Toss until every slice is coated. Let it sit for 5 minutes.
  4. In a separate bowl, whisk together 1 cup rolled oats, ¾ cup flour, ½ cup brown sugar, ¼ cup granulated sugar, ½ teaspoon cinnamon, and ¼ teaspoon salt. Add the cold, cubed butter. Use a pastry cutter or two forks to cut the butter into the dry ingredients until the mixture looks like coarse meal with pea-sized butter pieces.
  5. Pour the apple mixture into a 9×13-inch baking dish and spread into an even layer. Sprinkle the oat crumble topping evenly over the apples. Do not press it down.
  6. Place the dish on a baking sheet and bake for 40-45 minutes, until the topping is deep golden brown and the filling is bubbling around the edges. If the topping is browning too fast after 30 minutes, tent loosely with foil.
  7. As soon as the crisp comes out of the oven, sprinkle the flaky sea salt evenly over the top. Let the crisp cool on a wire rack for at least 15-20 minutes before serving.
  8. Serve warm, topped with vanilla ice cream or a drizzle of caramel sauce if desired.

Notes

Use a mix of apple varieties for best texture. Keep butter cold for a crumbly topping. Let the crisp rest for 15-20 minutes after baking to allow juices to thicken. For extra flavor, toast the oats before adding to the crumble.
