These chewy candy corn blondies with white chocolate combine nostalgic candy corn sweetness with a buttery, chewy blondie texture and pockets of melty white chocolate. Perfect for seasonal celebrations or anytime you crave a sweet, comforting treat.

Ingredients

Scale
  • 1 cup (227g) unsalted butter, melted
  • 1 cup (220g) packed brown sugar
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 1 1/2 cups (190g) all-purpose flour (or almond flour for gluten-free option)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup candy corn
  • 1 cup white chocolate chunks or chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving some overhang for easy blondie removal.
  2. In a large bowl, whisk together melted butter, packed brown sugar, and granulated sugar until smooth and glossy, about 2-3 minutes.
  3. Beat in eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in vanilla extract.
  4. In a separate bowl, sift together flour, baking powder, and salt.
  5. Gradually fold the dry ingredients into the wet batter gently with a spatula until no streaks of flour remain. Do not overmix.
  6. Gently fold in candy corn and white chocolate chunks, being careful not to crush the candy corn.
  7. Spread the thick, sticky batter evenly in the prepared pan.
  8. Bake for 25-30 minutes, starting to check at 22 minutes. Edges should be golden and set, center slightly soft with moist crumbs on a toothpick test.
  9. Cool completely in the pan on a wire rack for at least 30 minutes to develop chewy texture and firm up white chocolate.
  10. Use parchment overhang to lift blondies from pan, then cut into squares and serve.

Notes

For gooier white chocolate pockets, underbake by 2-3 minutes but ensure edges remain set. Avoid overmixing batter to prevent tough blondies. Brown sugar and melted butter are key for chewiness. Optional add-ins include chopped pecans or walnuts for texture. Gluten-free option: substitute all-purpose flour with 1:1 gluten-free baking blend. Dairy-free option: use coconut oil and dairy-free white chocolate chips.
