Cozy 5-Ingredient Crockpot Taco Soup for Chilly Nights

This incredibly easy taco soup requires just five ingredients and a slow cooker. Dump everything in and walk away for a rich, comforting soup that tastes like you spent hours in the kitchen.

  • 1 pound ground beef (85/15 or 90/10)
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 can (15 ounces) corn, drained
  • 1 packet (1 ounce) taco seasoning
  • 2 cups beef broth

Instructions

  1. Brown the ground beef in a skillet over medium-high heat until browned, about 5 to 7 minutes. Drain excess fat. (Optional but recommended.)
  2. Drain the corn in a strainer.
  3. Combine the ground beef (browned or raw), undrained diced tomatoes with green chilies, drained corn, taco seasoning, and beef broth in a slow cooker. Stir until the seasoning is evenly distributed.
  4. Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  5. About 30 minutes before serving, taste and adjust seasoning with salt, pepper, or lime juice if desired.
  6. Serve hot with desired toppings.

Notes

For a thicker soup, remove the lid for the last 30 minutes of cooking. Add a squeeze of lime juice before serving to brighten flavors. Leftovers keep in the refrigerator for up to 5 days and freeze well for up to 3 months.
