  • ½ cup (120 ml) pure maple syrup
  • 1 cup (120 grams) powdered sugar
  • 2 tablespoons (28 grams) unsalted butter, melted
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 10-cup Bundt pan thoroughly with butter and dust with flour, tapping out excess.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat softened butter with granulated sugar and brown sugar until light and fluffy, about 3–4 minutes.
  4. Beat in eggs one at a time, then stir in vanilla extract until smooth and glossy.
  5. Alternately add dry ingredients and a mixture of apple cider and buttermilk to the butter mixture, beginning and ending with dry ingredients. Mix gently until just combined.
  6. Pour batter into prepared Bundt pan and smooth the top with a spatula.
  7. Bake for 50–60 minutes, starting to check at 50 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  8. Let cake cool in pan for 15 minutes, then invert onto a wire rack and cool completely before glazing.
  9. In a small saucepan over low heat, whisk together maple syrup, powdered sugar, melted butter, vanilla extract, and salt until smooth and slightly thickened, about 3 minutes. Remove from heat.
  10. Drizzle warm glaze evenly over cooled cake, letting it drip down the sides.

Notes

Grease and flour the Bundt pan thoroughly to prevent sticking. Use room temperature eggs and butter for best texture. Alternate adding wet and dry ingredients to avoid overmixing. Cool cake completely before glazing to prevent glaze from running. Rewarm glaze gently if it thickens too much.
