This hearty kielbasa and white bean soup is a quick 30-minute meal that even soup skeptics will love. Smoked kielbasa, creamy cannellini beans, and tender vegetables simmer in a savory broth for a cozy, satisfying dinner.

  • 14 ounces smoked kielbasa, sliced into half-moons
  • 1 medium yellow onion, diced (about 1 cup)
  • 2 medium carrots, peeled and diced (about 1 cup)
  • 2 celery stalks, diced (about ½ cup)
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • ½ teaspoon salt, plus more to taste
  • 2 cups fresh spinach or kale, roughly chopped
  • Fresh parsley, chopped, for garnish (optional)
  • Grated Parmesan cheese, for serving

Instructions

  1. Brown the kielbasa. Heat the olive oil in a large pot over medium-high heat. Add the sliced kielbasa in a single layer (work in batches if needed). Cook for 3–4 minutes, stirring occasionally, until browned and fat has rendered. Use a slotted spoon to transfer kielbasa to a plate. Leave about 2 tablespoons of rendered fat in the pot.
  2. Sauté the vegetables. Reduce heat to medium. Add diced onion, carrots, and celery to the pot. Cook for 5–6 minutes, stirring occasionally, until onions are translucent and carrots have softened.
  3. Add the garlic and spices. Stir in minced garlic, dried oregano, dried thyme, smoked paprika, and black pepper. Cook for 30 seconds until fragrant.
  4. Pour in the broth and tomatoes. Add chicken broth and diced tomatoes with their juices. Scrape up browned bits from the bottom of the pot. Bring to a gentle boil.
  5. Add the beans and kielbasa. Stir in drained and rinsed cannellini beans and browned kielbasa. Reduce heat to low, cover, and simmer for 10 minutes.
  6. Stir in the greens. Remove lid and stir in chopped spinach or kale. Cook for 2–3 minutes until wilted (3 minutes for kale).
  7. Taste and adjust. Stir in ½ teaspoon salt, then taste. Adjust seasoning as needed (add a squeeze of lemon juice if flat).
  8. Serve. Ladle into bowls. Garnish with fresh parsley and grated Parmesan cheese.

Notes

Brown the kielbasa properly for best flavor. Rinse canned beans to avoid cloudy broth. Add salt at the end to control sodium. Simmer gently to avoid breaking down beans. The soup thickens as it sits; add broth when reheating. For a thicker soup, mash some beans against the pot before adding greens.
