Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. In a large bowl, whisk together 2 ½ cups all-purpose flour, 1 teaspoon baking powder, 1 ½ teaspoons ground cinnamon, ½ teaspoon ground nutmeg, and ½ teaspoon salt. Set aside.
  3. In another large bowl, beat 1 cup softened unsalted butter with 1 cup granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in 1 large egg and 1 teaspoon vanilla extract until fully combined.
  5. Stir in 1 cup pure pumpkin puree until the mixture is smooth and uniform.
  6. Gradually add the dry ingredients to the wet, mixing on low speed or folding gently with a spatula. Avoid overmixing.
  7. Pour the batter into the prepared pan, smoothing the top with a spatula to about 1-inch thickness.

  10. Beat 8 oz softened cream cheese and ½ cup softened butter together until creamy and smooth.

  12. Stir in 1 tablespoon fresh orange zest, 1 tablespoon fresh orange juice, and ½ teaspoon vanilla extract. Beat until fluffy and spreadable.
  13. Spread the frosting evenly over the cooled bars with an offset spatula or butter knife.
  14. Chill for about 15 minutes to set the frosting.
  15. Use the parchment overhang to lift bars out of the pan. Cut into squares or rectangles and serve.
