A warm and inviting charcuterie board featuring honey-toasted nuts, creamy brie, aged cheddar, prosciutto, and dried fruit, perfect for a romantic date night or cozy evening in.

Ingredients

  • Mixed nuts (raw or roasted, unsalted preferred), 1 cup
  • Honey, 3 tablespoons
  • Butter (unsalted), 1 tablespoon
  • Sea salt (flaky), 1/4 teaspoon
  • Cinnamon (optional), 1/4 teaspoon
  • Brie cheese, 4 ounces
  • Aged cheddar or gouda, 4 ounces
  • Prosciutto, 4-6 slices
  • Dried figs or dates, 1/2 cup
  • Fresh apple or pear, 1
  • Crackers or crostini, 1 cup
  • Fresh rosemary sprigs (for garnish, optional)
  • Honey (for drizzle, optional), 2 tablespoons
  • Red pepper flakes (optional), a pinch

Instructions

  1. Start with the honey nuts. Place a small skillet over medium heat. Add 1 tablespoon of butter and let it melt completely. Once it’s bubbling, add 1 cup of mixed nuts and stir to coat. Cook for 2-3 minutes, stirring frequently, until the nuts start to smell toasty.
  2. Add the honey and spices. Pour 3 tablespoons of honey over the nuts. Add 1/4 teaspoon of cinnamon if using. Stir constantly for another 2 minutes, until the honey is bubbling and the nuts are glossy and coated.
  3. Season and cool. Remove the pan from heat. Sprinkle with 1/4 teaspoon of flaky sea salt and stir once more. Spread the nuts on a piece of parchment paper to cool.
  4. Prepare the cheese and fruit. While the nuts cool, slice your aged cheddar or gouda into thin triangles. Leave the brie whole. Slice the apple or pear just before serving. If using figs, slice them in half lengthwise.
  5. Arrange the board. Place the brie wheel in the center or slightly off-center. Arrange the prosciutto in loose folds around the cheese. Add the sliced cheddar in a fan pattern. Fill in the gaps with the honey nuts, dried figs, apple slices, and crackers.
  6. Add the finishing touches. Drizzle a little extra honey over the brie if desired. Sprinkle a pinch of red pepper flakes over the honey for a spicy kick. Tuck a few fresh rosemary sprigs around the board for color and aroma. Serve immediately, or let it sit at room temperature for up to 30 minutes before serving.

Notes

Toast nuts low and slow to prevent burning. Let nuts cool completely before serving to avoid stickiness. Bring cheese to room temperature for best flavor. Prep all ingredients before assembling.
