  • 2 tsp baking powder

  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 3/4 cup (150g) packed brown sugar
  • 2 large eggs, room temperature
  • 1/2 cup (125g) plain Greek yogurt
  • 1 tsp vanilla extract
  • 2 medium ripe pears, peeled and diced
  • 1 cup (120g) walnuts, toasted and roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. Toast the walnuts by spreading them on a baking sheet and baking for 5-7 minutes until fragrant and lightly browned. Let cool.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, cloves, nutmeg, and salt.
  4. In another bowl, whisk the melted butter, brown sugar, eggs, Greek yogurt, and vanilla extract until smooth and creamy.
  5. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; some lumps are fine.
  6. Carefully fold in the diced pears and toasted walnuts, keeping the pear chunks intact.
  7. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  8. Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The tops should be golden and spring back lightly when touched.
  9. Let the muffins cool in the tin for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overmix the batter to keep muffins tender. Toast walnuts to enhance flavor and crunch. Peel pears to avoid tough texture. Use room temperature eggs for lighter crumb. If pears are very juicy, pat dry before folding in to prevent soggy batter. Batter can be prepared the night before and refrigerated; add 1-2 minutes to baking time if baking from cold batter.
