  • 1/2 cup pumpkin purée (not pumpkin pie filling)
  • 1/4 cup brown sugar, packed
  • 2 tablespoons granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt
  • 4 cups strong brewed coffee or espresso (about 46 shots)
  • 2 cups milk of choice (for steaming or frothing)
  • Whipped cream (homemade or store-bought)
  • Chocolate syrup or caramel sauce (for drizzling)
  • Cinnamon sticks, for stirring
  • Marshmallows (large or mini)
  • Black sanding sugar or black sprinkles
  • Licorice strings (for spider legs, optional)
  • Edible googly eyes (for a fun face on the marshmallow)

Instructions

  1. Make the Pumpkin Sauce (5 minutes): In a small saucepan, combine the milk, pumpkin purée, brown sugar, granulated sugar, pumpkin pie spice, and a pinch of salt. Whisk together over medium heat until warm and steamy, but do not let it boil. Stir constantly for about 3-4 minutes until the sugar is dissolved and the sauce is smooth. Remove from heat and stir in the vanilla extract. Set aside to cool slightly.
  2. Brew the Coffee (5 minutes): While the sauce is cooling, brew your coffee. Use a dark roast and brew it a little stronger than usual. If using an espresso machine, pull 4-6 shots.
  3. Froth the Milk (2 minutes): Warm your milk of choice in the microwave or on the stovetop until hot but not boiling. Use a frother to create a nice layer of foam. Alternatively, shake warm milk in a mason jar with a tight lid for 30 seconds, then microwave for 30 seconds to stabilize the foam.
  4. Assemble the Drinks: In each mug, add about 2 tablespoons of the warm pumpkin sauce. Pour in the brewed coffee, filling the mug about 2/3 of the way. Top with the frothed milk, holding back the foam with a spoon to let the milk pour in first, then spooning the foam on top.
  5. Create the Spiderweb Design: Place a dollop of whipped cream on top of the foam. Using chocolate syrup or caramel sauce, draw a spiral starting from the center and working outwards. Then, using a toothpick or skewer, start from the center and drag the syrup outwards towards the edge of the mug, creating the spokes of the web. Repeat 4-6 times around the mug.
  6. Add the Spider: Take a large marshmallow and cut it in half horizontally. Place one sticky side down on the whipped cream. Coat the top with black sanding sugar. Add edible googly eyes with a tiny dab of chocolate syrup. For legs, cut black licorice strings into small pieces and poke them into the sides of the marshmallow.
  7. Set Up the Bar: Arrange all components on a tray or counter. Place the pumpkin sauce in a small pitcher, the frothed milk in another, and the coffee in a carafe. Set out bowls of marshmallows, sprinkles, chocolate syrup, and cinnamon sticks. Let everyone build their own spooky masterpiece.

Notes

Make a double batch of the pumpkin sauce; it keeps in the fridge for up to a week. Warm mugs before assembling to keep the latte hot longer. If chocolate syrup is too thick, warm the bottle in a bowl of hot water. Work quickly after drawing the spiral to prevent the whipped cream from softening.
