Instructions

  1. Shred about 2 cups (roughly 300 g) of rotisserie chicken into bite-sized pieces. If the chicken is warm, let it cool slightly for easier shredding. Open your can of diced tomatoes with green chilies and get your chicken broth measured out.
  2. Pour 4 cups (960 ml) of chicken broth into your large pot over medium heat. Bring it just to a gentle simmer—bubbles should form around the edges, not a rolling boil.
  3. Stir in the entire 10-ounce (283 g) can of diced tomatoes with green chilies, including the juice. Then add the shredded rotisserie chicken. Let it warm through for 5 minutes, stirring occasionally.
  4. Reduce heat to low. Add the softened 4 ounces (115 g) of cream cheese in chunks. Stir gently but persistently until the cream cheese melts completely into the broth—this will take about 3-5 minutes.
  5. Taste the soup and season with salt or pepper if needed, but go easy as broth and chicken may already provide enough seasoning.
  6. Ladle the soup into bowls and scatter tortilla chips or strips over each serving. Serve hot.
