A quick and easy pasta dish featuring roasted cherry tomatoes, creamy burrata cheese, and fresh basil for a flavorful and elegant meal perfect for weeknights or dinner parties.

  • 2 cups (about 300g) cherry tomatoes, halved
  • 1 ball (4 oz / 115g) burrata cheese
  • 8 oz (225g) pasta (spaghetti or linguine recommended)
  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • A handful fresh basil leaves, torn
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Red pepper flakes (optional, a pinch)
  • Lemon zest from ½ lemon (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Rinse and halve the cherry tomatoes. Toss them on the baking sheet with 2 tablespoons olive oil, minced garlic, a pinch of salt, and freshly ground black pepper. Spread out evenly.
  3. Roast the tomatoes in the oven for 20-25 minutes until blistered and caramelized.
  4. While tomatoes roast, bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente (8-10 minutes). Reserve ½ cup (120ml) pasta water and drain pasta.
  5. In a large skillet over medium heat, add the roasted tomatoes with their oil and juices. Add the cooked pasta and toss gently to coat.
  6. Tear the burrata into large chunks and add to the pasta. Add 1 tablespoon olive oil and some reserved pasta water to create a creamy sauce. Toss gently until burrata starts melting but retains texture.
  7. Tear fresh basil leaves and sprinkle over the pasta. Add red pepper flakes and lemon zest if using. Adjust salt and pepper to taste. Toss lightly.
  8. Serve immediately, optionally drizzling with extra olive oil and garnishing with additional basil leaves.

Notes

Do not over-stir after adding burrata to keep pockets of creamy cheese. Use reserved pasta water to adjust sauce consistency. Watch tomatoes carefully while roasting to avoid burning. Tear basil by hand to release oils and aroma. Burrata can be substituted with fresh mozzarella but will be less creamy. For gluten-free, use gluten-free pasta. Leftovers keep up to 2 days refrigerated and reheat gently.
