  • 1.5 pounds fresh green beans, trimmed and blanched
  • 4 tablespoons unsalted butter
  • 1 cup finely chopped button mushrooms
  • 1 small yellow onion, minced
  • 2 garlic cloves, minced
  • 4 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup heavy cream
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon fresh thyme leaves or ¼ teaspoon dried thyme
  • Pinch of ground nutmeg
  • 1.5 cups French fried onions

Instructions

  1. Rinse and trim the green beans. Bring a large pot of salted water to a boil. Blanch the green beans for 4-5 minutes until crisp-tender and bright green. Drain and rinse with cold water or plunge into an ice bath. Drain again and set aside.
  2. In a large skillet, melt the butter over medium heat. Add mushrooms, minced onion, and garlic. Sauté for 7-8 minutes until mushrooms release moisture and mixture is tender and fragrant.
  3. Sprinkle flour over the mushroom mixture and whisk continuously for 2 minutes to cook out the raw flour taste. The mixture will thicken and bubble slightly.
  4. Gradually pour in the milk and heavy cream while whisking to keep the sauce smooth. Cook and stir until the sauce thickens enough to coat the back of a spoon, about 5-7 minutes.
  5. Season the sauce with salt, pepper, thyme, and nutmeg. Taste and adjust seasoning as needed.
  6. Fold the blanched green beans gently into the creamy mushroom sauce. Transfer to a greased 9×13-inch baking dish and spread evenly.
  7. Sprinkle French fried onions evenly over the casserole.
  8. Preheat oven to 350°F (175°C). Bake uncovered for 25-30 minutes until the topping is golden brown and the sauce is bubbling.
  9. Let the casserole rest for 5 minutes before serving.

Notes

If the sauce is too thick before baking, stir in a splash more milk to loosen it. Blanching the green beans locks in their bright color and crispness. For gluten-free, substitute flour with cornstarch or gluten-free flour and use gluten-free fried onions. For a vegan version, use plant-based butter and dairy-free milk and cream substitutes.
