Instructions

  1. Prep the potatoes: Peel 5 pounds of russet potatoes and cut them into 1-inch cubes. Rinse the cubed potatoes in cold water to remove excess starch. Drain well.
  2. Cook the potatoes in the crockpot: Place the cubed potatoes in a 6-quart slow cooker. Add 1 cup of water and 1 teaspoon of salt. Cover and cook on HIGH for 3-4 hours or LOW for 6-7 hours, until a fork slides through with no resistance.
  3. Drain the potatoes: Carefully drain the cooked potatoes in a colander. Let them sit for a minute or two to steam dry.
  4. Warm the dairy: While the potatoes are draining, warm 1 cup of whole milk in the microwave or on the stovetop until warm to the touch.
  5. Mash the potatoes: Return the drained potatoes to the crockpot or a large mixing bowl. Add the softened cream cheese, softened butter, sour cream, garlic powder, and black pepper. Use a hand mixer on low speed to mash everything together until smooth.
  6. Add the warm milk: With the mixer still on low, slowly pour in the warm milk. Mix until the potatoes are smooth and creamy. Do not overmix.
  7. Season and adjust: Taste the potatoes and add salt as needed. Stir in the fresh chives if using.
