Instructions

  1. Crack the eggs into a mixing bowl. Add 2 tablespoons of heavy cream or whole milk. Whisk until uniform and slightly frothy, about 30 seconds.
  2. Heat a nonstick skillet over low heat and add 1 tablespoon of unsalted butter. Let it melt slowly without browning.
  3. Pour in the egg mixture once the butter is melted and foaming. Immediately reduce heat to the lowest setting.
  4. Stir the eggs gently and continuously with a silicone spatula, scraping the edges and bottom of the pan to form soft curds. Cook for 3 to 5 minutes.
  5. When eggs are mostly set but still slightly runny, season with ¼ teaspoon salt and a pinch of black pepper. Stir gently to combine.
  6. Remove the pan from heat just before eggs look fully cooked. Let rest in the warm pan for about 30 seconds to finish setting.
  7. Serve immediately, garnished with fresh chopped chives or parsley if desired.
