A quick and easy no-bake summer dessert featuring layers of fresh peaches, honey-sweetened mascarpone cream, and graham crackers or ladyfingers. This creamy, light, and refreshing icebox cake is perfect for warm-weather gatherings and can be made ahead.

  • 45 ripe fresh peaches, thinly sliced
  • 8 ounces (225 grams) mascarpone cheese, softened
  • 3 tablespoons honey (mild-flavored such as clover or wildflower)
  • 1 cup (240 ml) cold heavy whipping cream
  • 1 teaspoon pure vanilla extract
  • 1215 sheets graham crackers or ladyfingers
  • 1 tablespoon fresh lemon juice
  • Optional garnish: fresh mint leaves or powdered sugar

Instructions

  1. Rinse and dry peaches. Slice thinly about 1/8 inch thick. Toss slices with lemon juice and set aside for 5 minutes.
  2. In a medium bowl, beat mascarpone cheese with honey and vanilla extract until smooth.
  3. In a separate chilled bowl, whip cold heavy cream until soft peaks form.
  4. Gently fold whipped cream into mascarpone mixture to keep it light and airy.
  5. In an 8×8 inch dish, spread a thin layer of honey mascarpone cream on the bottom.
  6. Add a layer of graham crackers or ladyfingers to cover the cream completely.
  7. Spoon one-third of the mascarpone cream over the crackers and spread evenly.
  8. Arrange a layer of peach slices over the cream.
  9. Repeat layering twice more, finishing with a final layer of cream and peaches on top.
  10. Cover the dish tightly with plastic wrap or lid and refrigerate for at least 4 hours, preferably overnight.
  11. Before serving, garnish with fresh mint leaves or powdered sugar if desired. Use a sharp knife dipped in hot water to slice cleanly.

Notes

Use ripe but firm peaches to avoid mushy texture. Chill bowl and beaters before whipping cream for best results. Fold whipped cream gently into mascarpone to keep airiness. Press layers gently to avoid crushing crackers. Can be assembled in individual glasses for presentation. For dairy-free version, substitute mascarpone with whipped coconut cream and honey with maple syrup. Store covered in fridge up to 3 days. Freeze before adding peaches if desired.
