  • 2 oz (55 g) dark chocolate (70% cocoa or higher), chopped
  • Pinch of salt

Instructions

  1. Chop 2 oz (55 g) dark chocolate into small pieces. Melt in a microwave-safe bowl in 20-second bursts, stirring between each, until smooth. Alternatively, melt using a double boiler on low heat. Let cool slightly but do not let it harden again (approx. 3-5 minutes).
  2. In a mixing bowl, sift together 1/4 cup (25 g) unsweetened cocoa powder and a pinch of salt to prevent lumps and ensure even flavor.
  3. Add 1 cup (240 ml) Greek yogurt, 3 tbsp (45 ml) honey or maple syrup, and 1 tsp (5 ml) vanilla extract to the bowl. Stir gently to combine with the cocoa powder.
  4. Slowly pour the cooled melted chocolate into the yogurt mixture. Whisk continuously (using an electric mixer if available) until the mousse is smooth and slightly fluffy with no streaks.
  5. Spoon the mixture into serving glasses or ramekins. Cover with plastic wrap and refrigerate for at least 1 hour to allow the mousse to firm up and flavors to meld.
  6. Before serving, garnish with fresh berries, shaved chocolate, or toasted nuts for added texture and color. Serve chilled.

Notes

Do not overheat chocolate to avoid bitterness. Use full-fat Greek yogurt for best texture and flavor. Chill mousse for at least 1 hour for proper firmness. If mousse is too thick after chilling, stir gently to soften; if too loose, refrigerate longer or add dissolved gelatin before chilling. Variations include adding espresso powder, fruit purees, or protein powder for extra flavor and nutrition.
