  • 2 tablespoons (24g) chia seeds
  • 2 tablespoons (14g) ground flaxseed
  • 1 cup (240ml) unsweetened almond milk
  • ½ cup (120g) Greek yogurt
  • 1½ tablespoons (30ml) maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt
  • Optional toppings: fresh berries, sliced banana, chopped nuts, seeds, nut butter

Instructions

  1. Combine the dry ingredients: In a mason jar or airtight container, add rolled oats, chia seeds, and ground flaxseed. Stir with a fork to distribute evenly.
  2. Mix the wet ingredients: In a small bowl or liquid measuring cup, whisk together almond milk, Greek yogurt, maple syrup, vanilla extract, and a pinch of salt until smooth.
  3. Pour and stir: Pour the wet mixture over the dry ingredients. Stir well with a spoon or spatula, scraping the bottom and sides to ensure everything is coated.
  4. Seal and refrigerate: Cover the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. Check the consistency: In the morning, stir the oats. If too thick, add a splash of milk (1-2 tablespoons) and stir until desired consistency.
  6. Add toppings and enjoy: Top with fresh berries, sliced banana, chopped nuts, or a drizzle of nut butter. Serve cold or let sit at room temperature for 10 minutes.

Notes

Don’t skip stirring before refrigerating to avoid dry pockets. Use rolled oats, not steel-cut or instant. For best texture, let rest 8-12 hours. Can be stored in the fridge for up to 5 days. Freeze for up to 2 months.
