  • 1/2 cup (50g) rolled oats (old-fashioned)
  • 1/2 cup (120ml) unsweetened almond milk (or any milk)
  • 1/4 cup (60g) plain Greek yogurt
  • 1 medium ripe banana
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder (optional)
  • 1 tablespoon (15g) chia seeds
  • 1 tablespoon (15ml) maple syrup or honey
  • Pinch of sea salt
  • Optional toppings: sliced banana, extra peanut butter drizzle, chopped peanuts, dark chocolate chips, cinnamon, or Greek yogurt

Instructions

  1. Mash the ripe banana in your jar or a small bowl with a fork until mostly smooth with a few small lumps.
  2. Add the almond milk, Greek yogurt, and peanut butter to the mashed banana. Stir until the peanut butter is mostly incorporated.
  3. Add the rolled oats, chia seeds, protein powder (if using), maple syrup or honey, and a pinch of sea salt. Stir thoroughly until well combined. If the mixture seems too thick, add an extra tablespoon of milk.
  4. If you used a separate bowl, pour the mixture into your jar or container. Put the lid on tightly and give it a gentle shake.
  5. Refrigerate for at least 6 hours, but ideally 8-12 hours.
  6. In the morning, check the texture. If too thick, stir in a splash of milk. If too thin, add an extra tablespoon of chia seeds and let sit for 30 minutes.
  7. Stir well, add your favorite toppings, and enjoy cold or at room temperature.

Notes

Don’t over-mash the banana; leave small chunks for flavor pockets. Let peanut butter warm up for easier mixing. Layer chia seeds last while stirring to avoid clumps. Different oats absorb liquid differently; adjust milk as needed. Don’t skip the salt. Use rolled oats, not quick or steel-cut. Best eaten cold; can be microwaved 30-45 seconds if preferred. Keeps in fridge up to 5 days. Toppings should be added just before eating.
