  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup chopped sun-dried tomatoes (about 70 grams), preferably oil-packed
  • 1 cup chicken broth (240 ml), low sodium recommended
  • 1 cup heavy cream (240 ml)
  • 1/4 teaspoon crushed red pepper flakes (adjust to taste)
  • 1/4 cup fresh basil, chopped (about 10 grams)
  • 1/3 cup grated Parmesan cheese (about 30 grams)
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Pat the chicken breasts dry with paper towels and season generously with salt and black pepper on both sides. (About 5 minutes)
  2. Heat 2 tablespoons olive oil over medium-high heat in a large skillet until shimmering. Add chicken breasts and cook without moving for 5-6 minutes until golden brown on the bottom. Flip and cook the other side for another 5 minutes or until internal temperature reaches 165°F (74°C). Remove chicken and tent with foil to keep warm. (Total 10-12 minutes)
  3. Lower heat to medium. In the same skillet, add minced garlic and chopped sun-dried tomatoes. Stir constantly for 1-2 minutes until fragrant but not burnt. (2 minutes)
  4. Pour in 1 cup chicken broth, scraping the bottom of the skillet to loosen browned bits. Stir in heavy cream and crushed red pepper flakes. Bring sauce to a gentle simmer. (3-4 minutes)
  5. Stir in grated Parmesan cheese and lemon juice until cheese melts and sauce thickens slightly. Taste and adjust seasoning. Sauce should coat the back of a spoon nicely. (2-3 minutes)
  6. Return chicken breasts to the pan, nestle into the sauce, and spoon sauce over the top. Warm through for 2-3 minutes to meld flavors.
  7. Sprinkle chopped fresh basil over the dish just before serving.

Notes

Do not overcrowd the pan to ensure a good sear. Use room temperature chicken for even cooking. Watch garlic closely to avoid burning. Simmer sauce gently to prevent curdling. Let sauce thicken naturally without flour or cornstarch. Tent chicken with foil after searing to keep juices locked in. Fresh basil added at the end brightens the dish.
