  • 2 cups cold heavy cream (480 ml)
  • 14 oz sweetened condensed milk (396 grams)
  • 1 teaspoon ground cardamom
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ½ cup water (120 ml) for cardamom syrup
  • Optional: pinch of salt

Instructions

  1. Peel and dice fresh peaches into ½-inch pieces. Toss with sugar and lemon juice in a bowl. Let sit for 15-20 minutes to macerate.
  2. In a small saucepan, combine ½ cup water, ½ cup sugar, and 1 teaspoon ground cardamom. Simmer over medium heat, stirring until sugar dissolves. Let simmer for 5 minutes to thicken slightly. Remove from heat and cool completely. Strain if desired.
  3. In a chilled large mixing bowl, whip the cold heavy cream with an electric mixer until stiff peaks form (3-5 minutes).
  4. In another bowl, stir together sweetened condensed milk, vanilla extract, and a pinch of salt if using. Gently fold in the whipped cream using a rubber spatula.
  5. Fold in the macerated peaches with their juices gently into the cream mixture.
  6. Pour half of the peach cream mixture into a freezer-safe container. Drizzle half of the cooled cardamom syrup over the top and swirl gently with a knife or skewer.
  7. Repeat layering with the remaining peach cream and cardamom syrup, swirling again.
  8. Cover tightly and freeze for at least 6 hours or overnight until firm and scoopable.
  9. Before serving, let the ice cream sit at room temperature for 5 minutes for easier scooping.

Let ice cream soften 5 minutes before scooping. For dairy-free version, substitute heavy cream with full-fat coconut cream and sweetened condensed milk with sweetened condensed coconut milk. Drain excess liquid from peaches if very juicy to avoid watery ice cream.
