  • 45 garlic cloves, minced

  • 1 tablespoon olive oil
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml)
  • 1 teaspoon fresh thyme leaves or 34 small sprigs
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Salt and freshly ground black pepper to taste
  • Optional: squeeze of lemon juice
  • Optional: pinch of crushed red pepper flakes

Instructions

  1. Pat the chicken thighs dry and season both sides generously with salt and pepper. Slice mushrooms, mince garlic, and chop herbs. (About 10 minutes prep)
  2. Heat a large skillet over medium heat and add olive oil and butter. Melt butter completely without browning (about 2 minutes).
  3. Add chicken thighs to the pan and brown on one side for 4-5 minutes until golden. Flip and brown the other side for 3-4 minutes. Remove chicken and set aside.
  4. In the same pan, add sliced mushrooms and sauté for about 5 minutes until they release moisture and start to caramelize.
  5. Add minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  6. Pour in chicken broth and scrape up browned bits from the pan. Let simmer for 2 minutes to reduce slightly.
  7. Stir in heavy cream and fresh thyme leaves. Bring to a gentle simmer and season with salt and pepper. Let sauce thicken for 3-4 minutes, stirring occasionally.
  8. Return chicken thighs to the pan, nestling them into the sauce. Cover with a lid and cook over low heat for 8-10 minutes until chicken reaches 165°F (74°C) internal temperature.
  9. Remove from heat, optionally squeeze lemon juice over the top, and garnish with chopped fresh parsley before serving.

Notes

Use unsalted butter to control salt levels. For a lighter sauce, substitute half-and-half for heavy cream. For dairy-free, use coconut cream and olive oil instead of butter. Use a meat thermometer to ensure chicken is cooked to 165°F. If sauce thickens too much before chicken is done, add more broth or cream.
