  • 1 cup fresh spinach leaves (about 30 grams)
  • 1/4 teaspoon garlic powder (optional)
  • Pinch of salt
  • Pinch of black pepper
  • 1 tablespoon fresh parsley (finely chopped, optional)

Instructions

  1. In a mixing bowl, combine 4 ounces softened cream cheese with 2 tablespoons mayonnaise. Add 1/4 teaspoon garlic powder, a pinch of salt, and black pepper. Mix until smooth and creamy. Let cream cheese sit at room temperature for about 15 minutes beforehand for easier mixing.
  2. Finely chop 1/2 cup roasted red peppers and fold them gently into the creamy mixture. For a smoother texture, puree the peppers before adding.
  3. Stir in 1 tablespoon chopped fresh parsley (optional) for brightness.
  4. Place one 8-inch tortilla flat on a clean surface. Spread an even layer of the creamy roasted red pepper mixture over the entire tortilla, reaching the edges.
  5. Arrange about 2 ounces of sliced turkey breast evenly over the spread. Top with a handful (about 1 cup) of fresh spinach leaves.
  6. Starting from one edge, roll the tortilla snugly but not too tight to avoid squeezing out the filling. Repeat with remaining tortillas and ingredients.
  7. Wrap each rolled tortilla in plastic wrap and place in the fridge for at least 30 minutes to help the filling set and make slicing easier.
  8. Remove wraps from fridge and unwrap. Using a sharp serrated knife, slice each roll into 1-inch thick pinwheels. Arrange on a serving plate.
