  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (oil-packed preferred)
  • 1 cup heavy cream (240 ml)
  • ½ cup chicken broth (120 ml)
  • ½ cup freshly grated Parmesan cheese
  • 2 cups fresh baby spinach (about 60 grams)
  • A handful fresh basil, chopped (or 1 teaspoon dried basil)
  • Salt and pepper, to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat dry chicken breasts and pound to about ½-inch thickness. Season both sides generously with salt and pepper. (Prep time: 5 minutes)
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken and tent with foil to rest. (Cook time: 12 minutes)
  3. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet. Stir frequently for 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Pour chicken broth into the pan, scraping up browned bits. Simmer for 2 minutes to reduce slightly.
  5. Stir in heavy cream and grated Parmesan cheese. Whisk continuously and let sauce simmer gently for 3-4 minutes until thickened.
  6. Add baby spinach and chopped basil. Stir until spinach wilts, about 1-2 minutes. Adjust seasoning with salt, pepper, and red pepper flakes if desired.
  7. Return chicken breasts to the skillet, nestling them into the sauce. Spoon sauce over chicken and warm together for 2 minutes.
  8. Serve immediately with extra sauce spooned on top. Pairs well with crusty bread or roasted potatoes.

Notes

Use oil-packed sun-dried tomatoes for best flavor and texture. To prevent cream sauce from curdling, add cream slowly and stir continuously over moderate heat. If sauce is too thick, add a splash of chicken broth; if too thin, simmer longer. Let sauce rest off heat for a minute before serving to thicken slightly. For dairy-free, substitute heavy cream with coconut or cashew cream and Parmesan with nutritional yeast or vegan cheese.
