  • Salmon fillets (skin-on or skinless, about 6 ounces / 170 grams each) – fresh or thawed
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil, drained)
  • 2 cups baby spinach, fresh
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated Parmesan cheese (50 grams)
  • 1/4 cup white wine or chicken broth (60 ml)
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme) – optional
  • Salt and freshly ground black pepper, to taste
  • Pinch of red pepper flakes – optional

Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides generously with salt and pepper. Set aside.
  2. Heat a large skillet over medium-high heat. Add 2 tablespoons olive oil and heat until hot but not smoking, about 1-2 minutes.
  3. Place salmon fillets skin-side down (if using skin-on) in the pan. Cook for 4-5 minutes without moving to form a crispy skin. Flip and cook the other side for 3 minutes or until just cooked through. Remove salmon and keep warm.
  4. Lower heat to medium. Add butter to the same skillet and melt.
  5. Add minced garlic and sauté for about 30 seconds until fragrant but not browned.
  6. Stir in chopped sun-dried tomatoes and cook for 1 minute to release flavor.
  7. Pour in white wine or chicken broth, scraping up browned bits from the pan. Simmer for 2-3 minutes to reduce slightly.
  8. Add heavy cream and stir well. Bring to a gentle simmer and cook for 3-4 minutes until sauce thickens and coats the back of a spoon.
  9. Stir in grated Parmesan cheese until melted and smooth.
  10. Add baby spinach and cook just until wilted, about 1-2 minutes. Season with salt, pepper, dried Italian herbs, and red pepper flakes if using.
  11. Return salmon fillets to the pan, spoon sauce over the top, and warm for 1 minute.
  12. Serve immediately with your choice of sides.

Notes

Keep heat moderate when cooking the cream sauce to avoid scorching. Add Parmesan cheese slowly to prevent sauce separation. Pat salmon dry before searing for a crispy skin. If sauce separates, add a splash of broth or cream and stir gently to bring it back together. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
