These crispy air fryer buffalo cauliflower bites are a quick, easy, and spicy snack that delivers the classic buffalo flavor with a satisfying crunch, perfect for game day or casual gatherings.

Ingredients

Scale
  • 1 medium head cauliflower, cut into bite-sized florets (about 4 cups)
  • ½ cup all-purpose flour (about 60g)
  • ½ cup water (120ml)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup buffalo sauce (e.g., Frank’s RedHot)
  • 1 tbsp olive oil or avocado oil
  • Optional: a few dashes of cayenne pepper for extra spice
  • Ranch or blue cheese dressing for dipping

Instructions

  1. Rinse the cauliflower head under cold water and pat dry. Cut into bite-sized florets, roughly 1.5 to 2 inches each.
  2. In a mixing bowl, combine ½ cup all-purpose flour, 1 tsp garlic powder, 1 tsp paprika, ½ tsp salt, and ¼ tsp black pepper. Slowly whisk in ½ cup water until smooth and slightly thick batter forms.
  3. Dip each cauliflower floret into the batter, letting excess drip off. Transfer coated pieces onto a parchment-lined baking sheet or plate without overcrowding.
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  5. Place the battered cauliflower in a single layer in the air fryer basket. Lightly brush or spray with 1 tbsp olive oil.
  6. Air fry for 15-18 minutes, shaking the basket or flipping florets halfway through until golden and crispy. Add 2-3 more minutes if needed, watching carefully to avoid burning.
  7. Transfer hot cauliflower to a large bowl. Pour ½ cup buffalo sauce over and gently toss to coat evenly. Add cayenne pepper if desired for extra heat.
  8. Return coated florets to the air fryer for an additional 3-4 minutes to seal the sauce and maintain crispiness.
  9. Serve immediately with ranch or blue cheese dressing for dipping.

Notes

Do not overcrowd the air fryer basket to ensure even cooking and crispiness. Dry the cauliflower well before battering. The final crisp step after coating with buffalo sauce is essential to avoid soggy bites. For gluten-free, substitute all-purpose flour with chickpea or gluten-free flour. For vegan, use plant-based buffalo sauce and dips.
