  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour (use gluten-free flour blend for GF option)
  • 2 large eggs, room temperature
  • Vegetable oil spray (for air fryer basket)
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (freshly ground if possible)
  • 1/2 cup Nutella (or any chocolate-hazelnut spread)
  • 1/4 cup heavy cream (use coconut cream for dairy-free)
  • 1 teaspoon vanilla extract
  • Pinch of salt (for Nutella dip)

Instructions

  1. In a medium saucepan, combine 1 cup water, 2 tablespoons unsalted butter, 2 tablespoons sugar, and 1/2 teaspoon salt. Bring to a boil over medium heat, stirring occasionally. Once boiling and butter is melted, remove from heat.
  2. Immediately stir in 1 cup all-purpose flour vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan, about 1-2 minutes.
  3. Let the dough cool for 5 minutes.
  4. Add eggs one at a time, beating well after each addition until dough is smooth and glossy, about 3-5 minutes by hand.
  5. Spray the air fryer basket lightly with vegetable oil spray to prevent sticking.
  6. Transfer dough to a piping bag fitted with a large round or star tip. Pipe 1-inch rounds onto parchment paper or roll into balls by hand to form about 20-24 bites.
  7. Place churro bites in the air fryer basket in a single layer, leaving space between each piece.
  8. Air fry at 375°F (190°C) for 10-12 minutes, flipping halfway through, until golden and crispy.
  9. While cooking, mix 1/2 cup sugar with 1 tablespoon cinnamon in a bowl.
  10. Once cooked, immediately toss hot churro bites in the cinnamon sugar mixture to coat evenly.
  11. In a small saucepan over low heat, warm 1/2 cup Nutella with 1/4 cup heavy cream, 1 teaspoon vanilla extract, and a pinch of salt. Stir until smooth and slightly warmed through, about 3-5 minutes. Do not boil.
  12. Arrange churro bites on a platter with a bowl of Nutella dipping sauce and serve warm.

Notes

Do not overcrowd the air fryer basket to ensure crispiness. Flip bites halfway through cooking for even browning. Coat churro bites immediately after air frying while hot for best sugar adhesion. Use room temperature eggs for better dough texture. Nutella dip can be warmed gently to avoid separation. Dough can be refrigerated up to 24 hours but pipe and cook fresh. For vegan version, use flax/chia eggs, vegan butter, vegan chocolate spread, and coconut cream.
