Instructions

  1. Preheat oven to 425°F (220°C) and position a rack in the middle.
  2. In a bowl, combine lemon juice and zest, 3 tablespoons olive oil, rosemary, thyme, minced garlic, salt, and pepper. Whisk to combine.
  3. Pat chicken thighs dry with paper towels. Toss chicken in marinade to coat evenly. Let sit at room temperature for 15-20 minutes.
  4. Wash and halve potatoes. In another bowl, toss potatoes with 2 tablespoons olive oil, whole garlic cloves, salt, pepper, and a pinch of rosemary and thyme.
  5. Spread potatoes and garlic in a single layer on a rimmed baking sheet. Nestle chicken thighs skin-side up among the potatoes. Pour leftover marinade over everything.
  6. Roast for 35-40 minutes, turning potatoes once halfway through. Chicken skin should be golden and crispy; potatoes tender and caramelized.
  7. Check chicken internal temperature with a meat thermometer; it should reach 165°F (74°C). If skin isn’t crispy enough, broil for 2-3 minutes watching carefully.
