This recipe delivers a perfectly crispy, nutty, and flavorful turkey breast with brown butter and sage, ideal for holidays or cozy weeknight dinners.

  • 1 bone-in, skin-on turkey breast (3 to 4 pounds / 1.4 to 1.8 kg)
  • 6 tablespoons (85 g) unsalted butter
  • 10 to 12 fresh sage leaves, washed and patted dry
  • 3 cloves garlic, minced or thinly sliced
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the turkey breast dry with paper towels. Rub the skin all over with olive oil, then season generously with kosher salt and freshly ground black pepper, including the sides and under the skin if possible.
  3. In a cast iron or oven-safe skillet over medium heat, melt the unsalted butter. Cook until it foams and turns golden brown with a nutty aroma, about 4 to 5 minutes.
  4. Stir in the minced garlic and sage leaves and cook for another 1 to 2 minutes until the sage is crisp and the garlic fragrant. Remove from heat but keep warm.
  5. Place the turkey breast on a roasting rack set inside a roasting pan. Pour half of the brown butter mixture over the skin, coating it evenly. Reserve the rest for basting.
  6. Roast the turkey in the oven for 50 to 60 minutes. Every 15 minutes, baste the turkey skin with the reserved brown butter mixture using a spoon or brush.
  7. Check the internal temperature with a meat thermometer inserted into the thickest part of the breast; it should read 160°F (71°C). The turkey will rest and continue cooking to an ideal 165°F (74°C).
  8. Remove the turkey from the oven and tent loosely with foil. Let it rest for 15 minutes before carving.
  9. Slice the turkey breast against the grain for tenderness. Drizzle any pan juices or remaining brown butter sage butter over the slices for extra flavor.
  10. Optional: If the skin isn’t crispy enough near the end, broil the turkey for 1-2 minutes, watching closely to avoid burning.

Notes

Use a meat thermometer to avoid overcooking. If you want extra crispy skin, broil for 1-2 minutes at the end. Kerrygold butter is recommended for browning. For a dairy-free option, substitute butter with a plant-based margarine that browns well. If no roasting rack is available, use a bed of sliced onions or carrots to elevate the turkey.
