  • 4 large flour tortillas (10-inch size)
  • 1 1/2 cups shredded cheese blend (sharp cheddar and Monterey Jack combo)
  • Optional: sliced green onions or fresh cilantro for garnish
  • 1/2 cup crumbled blue cheese
  • 1/4 cup sour cream or Greek yogurt
  • 2 tbsp milk
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Buffalo Chicken: In a mixing bowl, combine 2 cups of shredded cooked chicken with 1/2 cup buffalo wing sauce, 1 tablespoon melted unsalted butter, 1 teaspoon garlic powder, salt, and pepper. Toss well until the chicken is evenly coated. Set aside.
  2. Make the Blue Cheese Drizzle: In a small bowl, whisk together 1/2 cup crumbled blue cheese, 1/4 cup sour cream or Greek yogurt, and 2 tablespoons milk. Add freshly ground black pepper to taste. Adjust milk quantity for a pourable consistency. Set aside in the fridge to chill.
  3. Assemble the Quesadillas: Place one flour tortilla flat on a clean surface. Sprinkle about 1/3 cup shredded cheese evenly over half the tortilla. Spread about 1/2 cup buffalo chicken mixture over the cheese, then top with another 1/3 cup cheese. Fold the tortilla over the filling to create a half-moon shape.
  4. Cook the Quesadillas: Heat a nonstick or cast iron skillet over medium heat. Lightly grease with butter or oil (about 1 tsp). Place the folded quesadilla in the skillet and cook for 3–4 minutes per side, or until the tortilla is golden brown and crispy, and the cheese inside is melted. Use a spatula to flip carefully.
  5. Rest and Slice: Remove the quesadilla from the skillet and let it rest on a cutting board for a minute. Slice into 3 or 4 wedges.
  6. Serve: Arrange on a platter and drizzle with the blue cheese sauce. Garnish with sliced green onions or fresh cilantro if desired.

Notes

Keep heat at medium to medium-low to avoid burning tortillas. Use a mix of butter and neutral oil for best crispiness. Cheese layering helps everything stick and melt uniformly. Reheat leftovers in a skillet to maintain crispiness. Blue cheese drizzle is best made fresh before serving.
