  • 1 medium delicata squash (about 1 to 1.5 pounds)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/3 cup tahini
  • 3 tablespoons pure maple syrup
  • 2 tablespoons lemon juice
  • 2 to 3 tablespoons warm water
  • 1/4 teaspoon salt (for sauce)
  • Flaky sea salt (optional, for garnish)
  • Fresh parsley or chives (optional, for garnish)
  • Red pepper flakes (optional, for garnish)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top if available. Brush rack lightly with olive oil.
  2. In a small bowl, whisk together tahini, maple syrup, lemon juice, and 1/4 teaspoon salt. Add warm water one tablespoon at a time until smooth and drizzle-able. Set aside.
  3. Wash delicata squash, cut off ends, and slice into 1/2-inch thick rings. Scoop out seeds and stringy bits from the center of each ring.
  4. Set up three shallow bowls: first with flour, second with beaten eggs, third with panko, Parmesan, garlic powder, smoked paprika, 1/2 teaspoon salt, and black pepper. Mix breadcrumb mixture well.
  5. Working one ring at a time, dip into flour (shake off excess), then into eggs (let excess drip), then press into breadcrumb mixture to coat both sides. Place on prepared rack or baking sheet. Repeat with all rings.
  6. Lightly brush the top of each ring with olive oil.
  7. Bake for 12 minutes. Carefully flip each ring, brush the other side with olive oil, and bake for another 10 to 12 minutes until golden brown and crispy. For extra crispiness, broil for 1 to 2 minutes at the end, watching closely.
  8. Let rings cool on rack for 2 to 3 minutes. Transfer to a platter, drizzle with maple tahini sauce, and garnish with flaky sea salt, fresh herbs, or red pepper flakes if desired. Serve immediately.

Notes

For best crispiness, use a wire rack and do not overcrowd the pan. Let breaded rings rest for 5-10 minutes before baking to help coating adhere. The maple tahini sauce can be made up to 3 days ahead. Reheat leftovers in oven or air fryer, not microwave.
