  • 3 cloves garlic, minced
  • 1/2 cup (50 g) finely grated Parmesan cheese (Parmigiano-Reggiano preferred)
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper to taste
  • Optional: dried Italian herbs, red pepper flakes, fresh thyme or rosemary

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchinis into 1/4-inch (6 mm) thick rounds, trimming seeds if large to reduce moisture.
  3. In a mixing bowl, combine zucchini slices with olive oil, minced garlic, grated Parmesan, salt, and pepper.
  4. Toss gently but thoroughly to coat each round evenly.
  5. Arrange the rounds in a single layer on a parchment-lined baking sheet or silicone mat, avoiding overlap.
  6. Roast in the oven for 20-25 minutes, flipping halfway through (around 12 minutes) to brown both sides.
  7. Watch closely during the last 5 minutes to avoid burning; reduce heat or cover loosely with foil if needed.
  8. Remove from oven and let cool slightly to crisp up further.
  9. Serve warm as a side dish, appetizer, or snack.

Notes

Do not overcrowd the pan to prevent sogginess. Use freshly grated Parmesan for best crispness. Flip halfway through roasting. Avoid washing zucchini slices after cutting to reduce moisture. For extra crunch, sprinkle more Parmesan after flipping. To reheat leftovers, warm in a 375°F oven for 8-10 minutes; avoid microwaving to keep crisp.
