  • 1 cup (170g) semi-sweet chocolate chips
  • 1/4 cup (60ml) heavy cream
  • 1 tablespoon butter
  • Pinch of sea salt (optional)

Instructions

  1. Mix dry ingredients: In a large bowl, whisk together all-purpose flour, whole wheat flour, granulated sugar, cinnamon, baking powder, and salt.
  2. Cut in the butter: Add cold, cubed unsalted butter to the dry ingredients and cut in using a pastry cutter or forks until mixture resembles coarse crumbs with pea-sized bits.
  3. Combine wet ingredients: In a separate small bowl, whisk together honey, vanilla extract, and milk until smooth.
  4. Form the dough: Pour wet mixture into dry ingredients and stir gently until dough just comes together; avoid overmixing.
  5. Chill the dough: Flatten dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or silicone mat.
  7. Roll out the dough: On a lightly floured surface, roll chilled dough to about 1/8-inch (3mm) thickness.
  8. Cut and dock: Cut dough into 2×3 inch rectangles or squares and prick holes evenly with a fork to prevent puffing.
