  • Salt and pepper, to taste
  • 12 tablespoons olive oil or vegetable oil
  • 34 garlic cloves, minced
  • 23 tablespoons honey (raw or organic preferred)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon apple cider vinegar or rice vinegar
  • Pinch of red pepper flakes (optional)
  • Fresh parsley or green onions, chopped for garnish

Instructions

  1. Pat dry the chicken thighs with paper towels to remove excess moisture from skin and flesh.
  2. Season the chicken evenly with salt and pepper on both sides.
  3. Heat a large skillet over medium-high heat and add 1-2 tablespoons olive oil. Heat until shimmering but not smoking.
  4. Place chicken thighs skin-side down in the pan without crowding. Cook for 6-8 minutes until the skin is golden and crisp.
  5. Flip the chicken thighs and cook for another 5-6 minutes until cooked through (internal temperature 165°F / 74°C).
  6. Remove chicken from the pan and set aside on a plate, tent loosely with foil to keep warm.
  7. Lower heat to medium. Add minced garlic to the skillet and sauté until fragrant, about 30 seconds.
  8. Add honey, soy sauce, vinegar, and red pepper flakes, stirring constantly. Let the glaze simmer and thicken slightly for 2-3 minutes.
  9. Return chicken to the pan and spoon the glaze over each piece, coating well. Let simmer for 1-2 minutes to caramelize the sauce.
  10. Garnish with chopped parsley or sliced green onions and serve immediately.

Patting the chicken dry is crucial for crispy skin. Avoid overcrowding the pan to prevent steaming. Add the garlic last before the glaze to avoid burning. If glaze thickens too much, add a splash of water or lower the heat. Use tongs to flip chicken to avoid piercing the meat and losing juices. For extra crispy skin, you can finish the chicken in a 425°F (220°C) oven for 10 minutes after searing.
