Instructions

  1. Prepare the Ingredients (10 minutes): Dice the potatoes into small, even cubes (about ½ inch). Chop the onion and bell pepper. Mince the garlic. Slice the sausage if using links. Set aside.
  2. Cook the Bacon (8-10 minutes): Place bacon slices in a cold skillet and turn heat to medium. Cook slowly, turning occasionally, until crispy and golden. Remove bacon and drain on paper towels. Reserve about 1 tablespoon of bacon fat in the pan; discard excess fat or save for another use.
  3. Cook Sausage (5-7 minutes): Add sausage to the skillet with bacon fat over medium-high heat. Break it up and cook until browned and cooked through. Remove and set aside with the bacon.
  4. Sauté Potatoes and Veggies (15 minutes): Add olive oil or butter to the skillet if needed. Toss in diced potatoes, spreading them evenly. Let them cook undisturbed for a few minutes to develop a crispy edge, then stir occasionally until tender and golden. Add onions, bell peppers, and garlic halfway through cooking. Season with salt and pepper.
  5. Combine Meats and Cheese (2 minutes): Return bacon and sausage to the skillet, mixing gently with potatoes and veggies. Sprinkle shredded cheddar evenly on top. Lower heat to medium-low.
  6. Cook Eggs (4-6 minutes): Create four small wells in the skillet mixture. Crack an egg into each well. Cover the skillet with a lid or foil, cooking until eggs reach your preferred doneness—about 4 minutes for runny yolks, 6 for firmer. Watch closely to avoid overcooking.
  7. Finish and Garnish (1 minute): Remove skillet from heat. Sprinkle with chopped parsley or chives for freshness and a pop of color. Serve straight from the pan.

For best crispiness, cook potatoes undisturbed for several minutes before stirring. Use room temperature eggs for even cooking.
