  • 3/4 cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 1/2 tsp almond extract
  • 2 cups (250g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • About 24 whole almonds, sliced lengthwise for nails
  • 1 cup (120g) powdered sugar
  • 2 tbsp cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 12 tbsp milk
  • 34 drops gel green food coloring

Instructions

  1. Cream the butter and sugar in a large bowl until light and fluffy, about 3-4 minutes.
  2. Beat in the egg, vanilla extract, and almond extract until fully combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. The dough should be soft but not sticky.
  5. Preheat oven to 350°F (175°C). Scoop out about 1 tbsp (15g) portions of dough and roll into 2.5-inch (6 cm) finger shapes. Taper one end slightly and press three shallow indentations with the back of a knife to create knuckle lines.
  6. Press a sliced almond into the tapered end of each finger to form nails.
  7. Arrange fingers on parchment-lined baking sheets about 2 inches apart. Bake for 14-16 minutes until edges are golden and centers are set but slightly soft.
  8. While cookies bake, prepare the frosting by mixing powdered sugar, cream cheese, butter, milk, and green food coloring until smooth and spreadable.
  9. Once cookies have cooled for about 10 minutes, pipe or spread green frosting around each almond nail, flicking outward to resemble cuticles.
  10. Allow frosting to set at room temperature for 30 minutes before serving.

Notes

If dough becomes too soft while shaping, chill in the fridge for 10 minutes. Press almond nails firmly but not too deep to avoid burning or falling off. Frost cookies when slightly warm for better adhesion. Watch cookies closely after 12 minutes to avoid overbaking. For dairy-free, substitute butter and cream cheese with coconut-based alternatives. For gluten-free, use a 1:1 gluten-free baking blend.
