Decadent Spiderweb Brownie Cheesecake with Oreo Crust

  • 6 tablespoons unsalted butter, melted
  • 4 ounces bittersweet chocolate, chopped
  • 1/2 cup unsalted butter (1 stick), melted
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • Pinch of salt
  • 16 ounces cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup sour cream
  • 1/4 cup white chocolate chips
  • 1/4 cup semi-sweet chocolate chips
  • 12 teaspoons heavy cream or milk (to thin, if needed)

Instructions

  1. Preheat oven to 325°F (163°C). Crush Oreos finely and mix with melted butter. Press firmly into bottom of 9-inch springform pan. Bake 10 minutes and cool slightly.
  2. Lower oven temperature to 300°F (150°C). Melt bittersweet chocolate and butter together, cool slightly. Whisk sugar and eggs, stir in vanilla, fold in chocolate mixture, then flour and salt. Pour over Oreo crust and bake 15 minutes. Cool completely.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Pour over cooled brownie layer and smooth top. Bake 25–30 minutes until edges set and center jiggles slightly.
  4. Cool to room temperature, then refrigerate at least 4 hours or overnight.
  5. Melt white chocolate chips with 1 teaspoon heavy cream until smooth. Repeat with semi-sweet chocolate chips. Pipe concentric circles alternating chocolates on cheesecake. Use toothpick to drag from center outward and edge inward to create spiderweb pattern. Refrigerate 30 minutes to set.
  6. Remove cheesecake from pan carefully. Use a sharp knife warmed in hot water and dried between cuts to slice cleanly.

Notes

Do not rush cooling stages to prevent cracking. Use softened cream cheese for smooth texture. Fold flour gently into brownie batter to avoid toughness. Practice spiderweb piping on parchment paper before applying to cheesecake. Use a water bath for baking to reduce cracking if desired.
