  • 1 (16 oz) block Velveeta Cheese, cut into 1-inch cubes
  • 1 (10 oz) can Ro*Tel Original Diced Tomatoes & Green Chiles, undrained
  • 1/2 cup whole milk (or half-and-half)
  • 1/2 teaspoon ground cumin (optional)
  • 1/4 teaspoon garlic powder (optional)
  • Fresh cilantro, chopped (for garnish, optional)
  • Pickled jalapeños (for garnish, optional)

Instructions

  1. Cube the Velveeta into roughly 1-inch cubes.
  2. Place the cubed Velveeta, entire undrained can of Ro*Tel, and 1/2 cup milk into a medium saucepan. Do not turn on the heat yet.
  3. Place the saucepan over medium-low heat.
  4. Stir frequently with a wooden spoon or silicone spatula as the mixture heats. The Velveeta will soften and melt into the liquid. Keep scraping the bottom and sides to prevent sticking. This takes about 5 to 7 minutes.
  5. Watch for the smooth point—the queso will go from looking chunky to suddenly silky and cohesive. The texture should be thick but pourable.
  6. Once smooth, stir in ground cumin and garlic powder if using. Mix well. Taste and adjust seasoning if needed.
  7. Pour into a serving bowl. Garnish with fresh cilantro or pickled jalapeños if desired. Serve hot with tortilla chips.

Notes

Use medium-low heat to prevent scorching. Do not drain the Ro*Tel—the liquid is essential for consistency. If queso thickens as it sits, stir in a splash of warm milk. For parties, transfer to a small slow cooker set to ‘warm’ to keep it dippable for hours. Leftovers can be stored in an airtight container in the refrigerator for up to 5 days; reheat slowly with a splash of milk.
