  • 1 cup cooked bacon, crumbled (about 1012 strips)
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped green onions (about 34 stalks)
  • 4 large (10-inch) flour tortillas

Instructions

  1. Cook the bacon: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lay bacon strips in a single layer. Bake for 12-15 minutes until crispy. Transfer to a paper towel-lined plate to drain and cool completely. Once cool, crumble into small bits.
  2. Make the cream cheese filling: In a medium mixing bowl, add softened cream cheese and ranch seasoning. Using a hand mixer on medium speed, beat until smooth and fluffy, about 2 minutes. Scrape down sides of bowl.
  3. Add the mix-ins: Fold in crumbled bacon, shredded cheddar cheese, and chopped green onions using a spatula. Mix just until evenly distributed.
  4. Assemble the rolls: Lay one flour tortilla flat on a cutting board. Using a spatula, spread about ¼ of the cream cheese mixture evenly over the entire surface of the tortilla, going all the way to the edges. Layer should be about ¼-inch thick.
  5. Roll it up tight: Starting at one edge, roll the tortilla tightly into a log, applying gentle but firm pressure. Place the log seam-side down on a piece of plastic wrap.
  6. Wrap and chill: Wrap the rolled tortilla tightly in plastic wrap, twisting the ends to seal. Repeat with remaining tortillas. Refrigerate for at least 2 hours, or up to overnight.
  7. Slice and serve: When ready to serve, unwrap one roll at a time. Using a sharp knife, trim off the very ends (about ½ inch from each side). Slice the roll into ½-inch to ¾-inch thick rounds. You should get about 8-10 pinwheels per tortilla.
  8. Arrange and garnish: Place pinwheels on a serving platter in a single layer. Garnish with extra chopped green onions or fresh cracked pepper if desired. Serve immediately or keep refrigerated.
