Easy Baked Apple Cider Donuts with Cinnamon Sugar

These baked apple cider donuts are soft, tender, and packed with concentrated apple flavor. Coated in a buttery cinnamon sugar, they’re a quick and easy fall treat that even donut skeptics love.

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • ¼ cup unsalted butter, melted and slightly cooled
  • 1 large egg, room temperature
  • ½ cup buttermilk, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar (for coating)
  • 1 ½ teaspoons ground cinnamon (for coating)
  • ¼ cup unsalted butter, melted (for coating)

Instructions

  1. Preheat oven to 375°F (190°C). Spray a 6-cavity donut pan generously with non-stick baking spray.
  2. Pour 1 cup apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce to a simmer. Cook, stirring occasionally, until reduced to about ¼ cup (10-12 minutes). Remove from heat and let cool slightly.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. In a large bowl, whisk together granulated sugar, brown sugar, and melted butter until smooth. Add egg and whisk vigorously until lighter in color. Whisk in buttermilk, reduced apple cider syrup, and vanilla extract.
  5. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine). Do not overmix.
  6. Transfer batter to a piping bag or ziploc bag with the corner snipped off. Pipe batter into prepared donut pan, filling each cavity about ⅔ full.
  7. Bake for 10-12 minutes, until golden brown and a toothpick inserted into the thickest part comes out clean.
  8. Let donuts cool in the pan for 2 minutes, then turn out onto a wire rack. While still warm, brush each donut with melted butter, then dip into cinnamon sugar mixture to coat all sides.
  9. Serve warm or at room temperature.

Notes

For best results, use unfiltered apple cider and room temperature ingredients. Grease the donut pan well to prevent sticking. Don’t overmix the batter. The donuts are best enjoyed the day they are made. For a dairy-free version, use plant-based milk with lemon juice and vegan butter. For gluten-free, use a 1:1 gluten-free baking flour blend.
