Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toast the pecans in a dry skillet over medium heat, stirring frequently for 3-5 minutes until fragrant and lightly browned. Remove from heat and let cool.
  3. In a mixing bowl, combine cranberries, toasted pecans, brown sugar, maple syrup, orange zest, ground cinnamon, vanilla extract (if using), and chopped rosemary. Stir gently until well mixed and sticky.
  4. Place the whole wheel of brie in an oven-safe baking dish or small cast iron skillet. Optionally, slice off the top rind to expose the cheese.
  5. Spoon the cranberry pecan mixture evenly over the top of the brie wheel.
  6. Bake on the middle rack for 15-18 minutes until the brie softens and the topping bubbles slightly.
  7. Check doneness by gently pressing the brie; it should feel soft and the topping glossy and caramelized.
  8. Remove from oven and let rest for 5 minutes to set slightly.
  9. Serve warm with crackers, sliced baguette, or apple slices.
