Instructions

  1. Prep your baking sheet: Line a standard baking sheet with parchment paper or a silicone baking mat. Make sure the paper extends slightly over the edges—this will make it easier to lift the bark out later. Set the sheet aside while you prepare the chocolate.
  2. Melt the white chocolate: Place 12 ounces (about 2 cups) of white chocolate chips and 1 teaspoon of coconut oil or vegetable shortening in a medium microwave-safe bowl. Microwave on 50% power for 30 seconds. Remove and stir. Repeat this process—microwave for 30 seconds, then stir—until the chocolate is mostly melted with just a few small lumps remaining. This usually takes about 2-3 minutes total.
  3. Stir until smooth: Once the chocolate is mostly melted, continue stirring gently until all the lumps disappear and the chocolate is smooth and glossy. The residual heat from the bowl will melt the remaining chips. If you need to, microwave for one more 15-second interval, but be careful not to overheat.
  4. Add the candy corn: Reserve about ¼ cup of candy corn for topping. Gently fold the remaining 1 ¼ cups of candy corn into the melted white chocolate. Stir just until the candy corn is evenly distributed. Don’t overmix, or the candy corn might start to melt and lose its shape.
  5. Spread the mixture: Pour the chocolate and candy corn mixture onto your prepared baking sheet. Use a spatula or offset spatula to spread it into an even layer about ¼-inch thick. Don’t worry about making it perfectly rectangular—the rustic, irregular shape is part of the charm.
  6. Add the toppings: While the chocolate is still wet, sprinkle the reserved ¼ cup of candy corn over the top. If you’re using sprinkles or flaky sea salt, add those now too. Gently press the toppings into the chocolate with your fingers or the back of a spoon so they stick.
